  • 8 oz softened cream cheese
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 1 clove garlic, minced
  • 2/3 cup shredded Parmesan cheese
  • 1/2 cup shredded Mozzarella cheese
  • 1 Can artichoke hearts, drained and chopped into quarters
  • 8 oz frozen spinach, thawed and drained

Preparation

  • Preheat oven to 350°F .
  • Spray a small baking dish with non-stick cooking spray.
  • In a mixing bowl stir together cream cheese, sour cream, mayonnaise, garlic, parmesan, mozzarella and pepper.
  • Stir in artichokes and spinach.
  • Spread mixture evenly into prepared baking dish.
  • Bake until heated through and cheese melted, about 20 minutes.
  • Serve warm with tortilla chips, crackers, pita chips, vegetables, or toasted baguette slices (slice into 1/2 inch slices, brush rounds with olive oil, and bake at 400°F until golden brown).

BBQ Chicken Sliders

Ingredients (Makes 12 sliders)

  • 12 dinner rolls or Hawaiian sweet rolls
  • 3 cups shredded cooked chicken
  • ⅓ cup barbecue sauce
  • ½ red onion, thinly sliced
  • 6 slices pepper jack cheese
  • ¼ cup fresh parsley, finely chopped
  • 2 tablespoons butter

Preparation

  1. Preheat the oven to 350°F
  2. Slice the rolls in half lengthwise. Place the bottom half in a 9 x 13-inch rimmed baking dish. Spread the chicken evenly over the rolls, followed by the barbecue sauce, red onion, Pepper Jack cheese, and parsley. Place the remaining rolls on top.
  3. Brush the tops of the rolls with melted butter. Bake for 20 minutes or until the bread is golden brown. Slice into individual sliders to serve.

INGREDIENTS

  • Bag of your preferred Tortilla Chips (preferably a “thicker” chip that won’t get soggy with all the toppings)
  • 16 oz shredded cheese (Monterrey Jack OR Colby Jack)
  • Seasoned Ground Beef, shredded beef, shredded pork, chicken, or your preferred meat substitute (cooked)
  • Black beans
  • Tomatoes, chopped
  • Jalapenos, sliced (wear gloves if slicing fresh!)
  • Corn 
  • Black olives

Optional Side Items

  • Avocado/guacamole
  • Sour cream
  • Salsa

INSTRUCTIONS

  • Preheat oven to 350°F
  • Line a baking sheet with a silicone baking mat or foil.
  • Spread chips over cookie sheet, making sure they overlap slightly to create a solid base.
  • Sprinkle half of the cheese evenly over the chips
  • Evenly distribute all toppings over the chips and cheese
  • Sprinkle on remaining cheese
  • Bake 10 minutes, or until cheese is melted
  • Serve warm with sour cream, salsa, and/or guacamole.

Mini Bacon-Wrapped Meatloaf

Ingredients

  • 1 tablespoon olive oil
  • 1 cup chopped yellow onion
  • 1 clove garlic
  • 2 tablespoons chopped fresh parsley
  • ½ teaspoon chopped fresh thyme leaves (or ¼ teaspoon dried thyme)
  • 2 teaspoons salt
  • ½ teaspoon ground black pepper
  • 1 tablespoon Worcestershire sauce
  • 2 lbs. ground beef
  • ½ cup plain dry breadcrumbs
  • ⅓ cup milk
  • 2 large eggs, lightly beaten
  • ¼ cup ketchup
  • 1 tablespoon light brown sugar
  • 1 teaspoon apple cider vinegar
  • 6 slices center-cut bacon (not thick-cut)

Preparation

  • Preheat over to 400°F
  • Heat olive oil in a skillet over medium-low heat. Add the onion, garlic, parsley, thyme, salt and pepper. Cook, stirring frequently, until the onions are translucent (about 7-10 minutes). Remove from the heat and stir in the Worcestershire sauce. Set aside.
  • In a large bowl, gently combine the ground beef, onion mixture, breadcrumbs, milk and eggs.
  • Divide the mixture into 6 portions and shape into oval balls. Wrap each ball with one strip of bacon.
  • Arrange bacon-wrapped meatloaves on a parchment-lined or foil-lined baking sheet that has been lightly coated with nonstick spray.
  • In a small bowl, stir together ketchup, brown sugar and vinegar. Brush a light coating of the ketchup mixture on top of each meatloaf (do not use it all!).
  • Bake until the fat from the bacon has rendered, about 20 minutes.
  • Increase the oven temperature to 425°F. Brush meatloaves with remaining ketchup mixture. Continue to bake until the meatloaves are cooked through and the bacon is crisp, about 15 more minutes.

Sweet and Spicy Buffalo Cauliflower Bites

Ingredients

  • 1 large head of cauliflower cut into florets
  • ½ cup all-purpose flour
  • ½ cup water
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Nonstick cooking spray
  • ½ cup hot sauce
  • 2 tablespoons butter, melted
  • ½ tablespoon lemon juice
  • Ranch or blue cheese dressing 

Preparation

  • Preheat oven to 450°F
  • Grease a baking sheet with cooking spray or line it with parchment paper.
  • In a large bowl, whisk flour, water, garlic powder, paprika, salt and pepper until batter is smooth. Add cauliflower to batter and toss to coat.
  • Spread cauliflower onto the prepared baking sheet in a single layer with space between them. Bake in the preheated oven until lightly browned, about 20 to 25 minutes, flipping over halfway through.
  • In another small bowl, combine the hot sauce, melted butter and lemon juice until well blended. Brush the buffalo sauce mixture on the cauliflower
  • Return to the oven and bake until they start to brown, about 15 minutes.
  • Serve hot with ranch dressing or blue cheese
